The John Larroquette Show also started off during the night hours. And man, it was great - dark, off-kilter humor. But the show literally jumped the shark when NBC decided it should take place during the day - cancellation soon claimed the show's life.

Michael Crichton (the Creator) had been a Doctor and probably did that intentionally to show the long hours and all the stuff that happens to people all hours of the day.
Another show set at nignt a lot was "The Untouchables" in the early 60s. Also "The Twilight Zone" did some shows where being set at night was a huge part of the drama. (The Invaders, Nothing in the Dark)

No show has ever ~literally~ jumped any shark. Even Happy Days, where the phrase originated, only showed a character jumping a shark - the show itself never literally jumped the shark. It's a metaphor. It can't be literal.
I believe That 70s Show had a character jump a shark (Fez, in a daydream), and The Simpsons has had a couple of characters attempt it, and Arrested Development will in an upcoming episode.
