Keihin carb jetting question

 Hi folks,
I picked up a '97 Kawasaki 750 STS as a family runabout. It has the dual
CDK II-40s. All runs well at full throttle (which runs strong) but when I
drop to about 3/4 throttle after wide open, the engine bogs like it's
running lean.

I made several attempts of trying to adjust this out by richening the high
speed mixture screw, low speed mixture screw and then both, but couldn't
resolve the problem. So I rebuilt the carbs with Keihin factory rebuild
kits. The problem was still there, so I figured it must be a jetting issue.
When I looked at the sizing on the jets, there's a 40 and a 72. Looking
these up online, they are listed as both Low Speed jets. This seems rather
odd. I figured I needed to go larger on the "high speed", so I swapped the
72s for 80s. Now the midrange bogging problem has mostly disappeared, maybe
one in 20 tries she'll bog after the full throttle pass, but I note that my
high speed mixture screw has to be 2 turns out for things to run well, and
when I richen it even more (out to like 3 1/2 turns even) it doesn't make
any difference to the high speed running. So now I'm puzzled. Ideally I'd
want the mixture screw to be in the range of 1 to 2 turns out, but the fact
that opening it up further doesn't change anything makes me think the
jetting sizes are not well centered.

After all this, I removed the stock flame arrestor and installed Ocean Pro
Vortex flame arrestors, removed the choke butterflies and added primer
injection. Otherwise the engine is completely stock. The GPS shows I'm
topping out at 48 mph on smooth water on a good day, so it's running well
but I want it optimized.
Any suggestions or advice here? I'm thinking next to go up on the 40 jets
to maybe 46s. Anyone have the same setup I do and have the magic formula?
