Good Luck Dave, that is WAY beyond my scope of practice. I'm sure it will be a beauty when you are finished. How man hours are on the 351 engine?

We have gone through the motor and now tested, as above, with 465> hours, it should not need a compression test, or the pmc exaust> manifolds removed or inspected, the ignition and raw water pump/cooling> system got lots of attention, and is already tested water tight even at> op. temp., during or second engine test/carb/lgnition adjustments, the> final carb adj. yeilded an engine that runs smooth enough at idle (600> rpm) you could set your beer on the air breather while running ! It's not the hours it's the age, but if it sounds strong and runs smooth don't worry about it. My friends 1992 MasterCraft has about 1500 hours in it's 351 and it still runs great! Of course it gets exercised very regularly.
I put electronic ignition on my 1981 boat which is very similar to yours with a PCM Ford 351 Winsor etc... It is worth replacing the points and condensor if you are doing much to the boat anyway. Of course you would have to reset the timing and if everything it tip top save that for later.
I think finishing off the season and using it as much as you can before you dry dock it and tear it apart is a good plan!
465 hrs?!? You aren't even getting broken in until around 750. I've heard nothing but good things about the 351 engine too.
