What are you looking for, what's your style and what's your experience level?
For the "discerning" diver, I recommend either Mike Severns or Ed Robinson on Maui. Maui Divers is a nice chain of shops that runs daily shore divers in Ka'anapali or Kahana.

In Maui, Lahina Divers gets mostly positive reviews as a cattle boat. They are best suited for the newbie who may need more than a little handholding. Be advised that the hand is out at the end of the trip.
