I have a 1980 Everest and it will start but once it is started you can
hold the throttle down wide open and the machine just boggs. THen once
you let go of the throttle the machine just dies. It has a cleaned
carborator, new coil, new fuel pump gaskets.
I just went through this myself. My machines had been parked for two years (I wonder why ;>) so I cleaned out the carbs. On one machine, I couldn't get it to idle and it would be slow to power up at WOT. Took the carbs apart again and I noticed one valve that I missed because it is recessed and has a slot for a screwdriver. It was easy to miss since it was black and I barely saw the slot. Unscrewed it and low and behold, this valve was filled solid with gunk. Had to use a steel wire brush's bristle to poke it out as air and carb cleaner wasn't enough.
If yours is a typical Mikuni, you would look at it from the bottom. It is directly in line with the other two:
o O 0 ^ ^ ^ fuel inlet ^ ^ needle ^ ^ and seat ^ IDLE AIR METERING VALVE (recessed) ^ Main metering jet (hex)
