I'd suggest doing 17 Mile Drive through Pebble Beach, starting from Pacific Grove.
Another good area is Carmel Valley Rd, headed east from Carmel. If you like hills, Laureles Grade from Carmel Valley Rd to Hwy 68 has a nice 10% grade.
The bike down to Big Sur on Hwy 1 has lots of nice scenery, but it can be very windy.
Local bike stores will have the "Krebs Map", which shows bikeable routes in Monterey, San Jose, Santa Cruz, etc. Try Aquarian Cycles or Josselyn's in downtown Monterey.
Heck, if you want company, I'm up for a ride on Saturday, the 30th.
It looks like there won't be any Nacimiento-Ferguson Road rides this spring, there being a large landslide about 10 miles in from the coast (beyond the summit) for which the county has closed the road and is not attempting to repair it until the hillside stabilizes. Knowing how steep and deep these ravines are, I can imagine that there is no safe passage around the slide.
