assumed that's a touristic attaction, or do people really pick and park>>their bikes at the center of that mesh?)>
Joke..? Sure it's real!
What I found surprising is that it was the only bicycle parking I saw (or I remember) in Ghent, while in towns like Antwerp there are smaller (compared to this) bike parking areas all around. Didn't see any movement in or out either. Next time, I'll try in summer.

As I said it's just one of the bicycle parkings around the railway station. If you didn't see much movement, it is because most commuters who use them have dayjobs in Brussels. On the other side of the railway square is a bicycle parking with 3 floors.
If you didn't had anything else to visit or to remember from Gent, that's too bad.

an ancient but well preserved castle,
fake. In 19th century there was a plain factory on/in the ruins. When that went bust, touristic sense saved the place from oblivion and decay. But yes, there was a castle looking like that in the middle ages.

I assume your architecture bit covers most relevant places (like Vrijdagmarkt, Prinsenhof)

Like me. I commute between my flat to the bike parking rack most days. If I'm feeling adventurous (and I can find the bike amongst the pile) I even ride to the shops on it. It needed some rather urgent repairs though, which I think have have carried out successfully.
But yes, that rack is in a state of flux. It's a bugger to get a park there sometimes! OK, so maybe all the bikes aren't used regularly, but sometimes the rack is half full (or half empty). And there are Others. A lot of folks ride bikes in Belgium.
